Is your walk-in cooler set at the correct temperature?
If your walk-in cooler or freezer temperatures are not correct for the type of products its storing, it could lead to spoilage. Thermometers are a very good indicator if your walk-in is properly maintaining the desired temperature.
The type of food you are storing as well as the type of refrigeration unit you are using will affect the temperature you need to set your unit.
Listed below are a few guidelines of temperature ranges based on your type unit:
- Reach-In Refrigerators 35F to 38F
- Walk-In Refrigerators 35F to 38F
- Reach-In Freezers +5F to -10F
- Walk-In Freezers 0F to -10F
- Ice Cream Freezers -10F to -20F
It takes time to stabilize the temperatures for commercial refrigeration units. Bigger units take longer to stabilize. You should always wait a full day when adjusting the temperature before storing food.
Commercial refrigeration temperatures will rise with the opening of equipment doors. If you temperature is reading high, try leaving the door closed for 5-10 minutes then re-check.
Be sure to educate your staff about the importance of refrigerator/freezer doors and or draws staying closed. You may consider installing a second thermostat to always maintain the correct temperatures in your walk-in refrigerators/freezers.
